<h4>INGREDIENTS:</h4>
<ul>
<li>2 large eggs, separated</li>
<li>2 tablespoons softened butter</li>
<li>1/2 cup granulated sugar</li>
<li>2 teaspoons vanilla</li>
<li>pinch salt</li>
<li>dash ground nutmeg</li>
<li>1/4 cup all-purpose flour</li>
<li>1 1/3 cups prepared commercial eggnog</li>
<li>boiling water</li>
</ul>

<h4>PREPARATION:</h4>
<p>Butter six 5- to 6-ounce ramekins or four 7 to 8-ounce ramekins. Heat oven to 350°. Beat egg whites in a small bowl just until soft peaks begin to form; set aside.</p>
<p>In a mixing bowl, beat together the egg yolks, softened butter, granulated sugar, vanilla, salt, and nutmeg. Stir in flour. Stir in eggnog until smooth. The batter will be thin. Fold in the egg whites, working with about 1/3 of the egg whites at a time. Divide the batter among the prepared ramekins.</p>
<p>Place ramekins in a large baking pan; place on middle rack in oven. Ladle boiling water into the pan until the water is about 1 inch in depth.</p>

<p>Topping: Combine the melted butter, graham cracker crumbs, butterscotch chips, coconut, and pecans. Spread over bottom of a buttered 13&#215;9-inch baking pan.</p>
<p>Cake: Cream shortening with granulated sugar until light. Beat in eggs, one at a time, beating well after each addition. Into another bowl, sift together the flour, salt, and baking powder. Add sifted ingredients to the creamed mixture, alternating with the milk, beginning and ending with the flour. Beat well after each addition. Beat for about 1 minute longer then pour over the topping. Bake in a preheated 350° oven for 30 minutes, or until the cake bounces back when touched lightly with finger. Cool for 5 minute in the pan; invert carefully onto serving plate, spooning any topping left in the pan over the cake; cut into squares.</p>

<li>4 cups confectioners&#8217; sugar</li>
<li>reserved browned butter</li>
<li>1/8 teaspoon salt</li>
<li>1 teaspoon vanilla</li>
<li>about 1/3 cup milk</li>
<li>remaining chopped pecans</li>
</ul>
<h3>Preparation:</h3>
<p>In 2-quart saucepan over medium low heat, brown pecans in butter until butter is lightly browned; stir constantly. Drain browned butter into a measuring cup; set aside.</p>
<p>In a large mixing bowl combine flour, sugar, brown sugar, and baking powder, salt, milk, vanilla, eggs, and 1/2 cup of the browned butter. Beat for about 2 minutes. Stir in 3/4 cup of the chopped pecans. Pour batter into two greased and floured 8- or 9-inch round layer cake pans. Bake at 350° for 25 to 30 minutes, or until toothpick comes out clean when inserted in center. Cool for 5 minutes; remove from pans and cool thoroughly before frosting.<br />
Frosting:<br />
Blend confectioners&#8217; sugar with remaining browned butter, 1/8 teaspoon salt, 1 teaspoon vanilla, and 1/4 cup milk. Add more milk if necessary, a teaspoon at a time. Stir in remaining chopped pecans. Spread top of one layer with about 1/2 cup frosting; top with second layer. Spread remaining frosting over the top and sides of the cake.</p>

<li><span> Cream the butter and blend in the white sugar, eggs, and vanilla. Beat until light and fluffy. Add the sifted dry ingredients to the creamed mixture alternately with the milk. Stir until just blended. Pour batter into prepared pan. </span></li>
<li><span> Bake at 350 degrees F (175 degrees C) for 50 to 55 minutes or until cake springs back when lightly touched. Remove from pan and allow it to cool. </span></li>
<li><span> Variation: Blueberry Cake; Add 1/4 teaspoon nutmeg to your dry ingredients and stir in 1 cup fresh blueberries into the batter before you bake it. Cut it into squares while it is still hot. </span></li>

In a large mixer bowl, cream butter until smooth. Add brown sugar and eggs.  	Beat with mixer until light and fluffy &#8211; about 5 min. With mixer on low  	speed, beat in vanilla and chocolate, then baking soda and salt. Add flour  	alternately with sour cream, beating on low speed until smooth. Pour in  	boiling water; stir with spoon until blended.<br />

<p><span style="font-family:Arial;"> Combine flour, cocoa, milk powder, baking soda and salt<br />
in bowl. Puree banana, sugar, egg whites, buttermilk and vanilla in 	food processor until smooth. Add dry ingredients and pulse just until 	blended. Pour into prepared pan. Bake until toothpick 	inserted in center comes out clean. Cool on wire rack.</span></p>

<p><span style="font-family:Arial;">In a large bowl, sift or whisk together  	flour, salt, baking powder, baking soda, sugar, and cocoa.</p>
<p>Add 1 cup and 2 tablespoons of water and 1 cup and 2 tablespoons of canola  	oil. Mix for 1 minute.</p>
<p>Add eggs, 3/4 cup of water, vanilla. Mix 5-6 minutes with a whisk, 3-4  	minutes with a hand mixer.</p>
<p>Pour into pans, bake,  test by placing and removing a toothpick through  	the center at 25 minutes. When toothpick comes out clean, loosen from pans  	and then put back in the pans. Let cakes cool for 15 minutes. Keep in the  	pans, wrap in foil, and put in the freezer for at least 2 hours.</p>
<p><span style="color:#008000;">Frosting<br />
</span><br />
This part is a little harder as it is really done to taste.</p>
<p>Put powdered sugar and 3/4 cup cocoa into a blender, mix until blended.</p>
<p>Drizzle in, until about the consistency of firm butter, several  	tablespoons of flavoring liquid (water if you aren&#8217;t looking for flavor  	beyond the cocoa and butter). Do not put in too much liquid, but if you do,  	add cocoa or sugar.  When the flavor and consistency is right,   	add 1 1/2 cup of butter (firm, not cold and not too soft). A good rule of  	thumb is that both the butter and the sugar mixture should be slightly  	firmer than you would want it to be to spread it, since the mixing action of  	the blender will warm it slightly. Mix until blended.</p>
<p>Assembling the cake:</p>
<p>Remove the cakes from the freezer and from their pans. Stack, frosting each  	layer as you go. Let sit for an hour before serving.</span></p>
